It was back in 1765 that A Boulanger, whose surname translates as “baker”, opened a drinks establishment in Paris that also served food.

At the time, only foodless taverns existed, where the “idle” would gather together to enjoy the warmth afforded by good wine. Boulanger, more concerned with doing good business than with the health of his customers, had the ingenious idea of offering them solid sustenance to fill the stomach, reduce the effects of the alcohol and thus enable them to carry on drinking.

It was a good arrangement, not only for Boulanger but also for those who frequented the tavern, who could now satisfy their hunger and cheer their spirit at the same time. Son, his fellow tavern keepers, worried that their own businesses would suffer, reported Boulanger to the relevant authorities. However, he won his case and made his snacks more substantial, creating a menu. A menu which initially featured just one dish, a choice between sheep’s trotter soup or pork with white sauce.
